We love to rely on fried chicken for quick and easy meals – our favorite shortcut in the grocery store. This easy healthy lunch is simple to make. Add shredded chicken to a bowl with some parsley (this is inspired from our favorite spice, Chimichurri), garlic, oil, vinegar, and serve with toasted bread.

1/2 c.

freshly chopped parsley

1 tablespoon.

chopped red chilli

1/3 c.

Extra virgin olive oil

1 c.

shredded roast chicken

Freshly ground black pepper

Toasted bread for serving
