If you love a wildly crispy chip, plantains are the way to go. With a little more fiber than your average spud chip, these plantain chips only need 3 ingredients and either a mandolin or a really sharp knife. The more evenly you cut them, the more evenly they bake: the thinner the cut, the faster the baking process and the crisper the chip.

If you’re human and don’t have a mandolin to make perfectly even slices, don’t worry: just keep an eye on the casserole and pull chips off the sheet once they’re a deep golden color. They get even crisper as they cool down.

When it comes to using green or yellow plantains, green is the best candidate. With more strength and structure and less moisture, green plantains are easier to cut, bake more evenly and tend to be perfectly crispy and crispy. In contrast to yellow plantains, which have a lot more sugar and fruity-tart sweetness, green plantains become a beautiful blank canvas for all your seasoning needs, whether they are simply salty, slightly hot or cinnamon-sweet (like these sweet potato chips!).

  1. Preheat the oven to 350 °. In a large bowl, mix the plantains, oil and salt until they are evenly covered. Arrange the plantain chips in a single layer on two large baking trays.
  2. Bake until golden brown and crispy, about 20 minutes. If necessary, place golden chips on a plate and return thick, blonde chips to the oven to bake for another 3 to 5 minutes until crispy.
  3. Optionally prepare a spice mixture: Mix all the spices in a large bowl to form an even mixture. Add baked chips and toss for coating.
